Raicilla Perra Suerte, 100% Maximiliana Agave, has a translucent appearance.
The aroma of fresh herbs and vegetables predominates on the nose, while the palate has a fruity flavor with volatile bitter notes, with light floral and caramel tones.
On the palate, the finish is short and central; the aftertaste is dominated by the fermentation of tropical fruits and notes of coconut and berries, reflecting the flavors and aromas typical of the Sierra region and offering a unique taste, a personality achieved by our Master Raicillero.
Master Distiller: Don Manuel Salcedo.
Process: Small Batch - Artisan (Handmade).
Agave growth: 8 to 12 years old, semi-wild.
Jima: They are harvested with a coa, axe and machete. Once harvested, the pineapples are loaded into wicker baskets and taken to the oven.
Cooking / Oven: The pines are split and baked for three days in an adobe oven heated with firewood obtained in a controlled manner from endemic oak species from the Sierra de Jalisco.
Grinding (Crushing): Axe and Crusher.
Water: Coming from a natural spring located in the mountains.
Fermentation: Natural, water with cooked bagasse is preserved in a dark room for 4 to 6 days.
Distillation: Naturally distilled once in a hybrid still, the traditional way of doing it in the Sierra de Jalisco.
Alcohol content adjustment: The adjustment is made until the alcoholic strength of 41° is achieved according to the historical taste of the region.
Bottle: Recycled glass.
